Honey Dijon Salmon

This is an exciting new way to make salmon and will absolutely become a staple at your dinner table.

Ingredients
4 salmon filets
1/4 cup butter
3 Tbsp Dijon mustard
1 1/2 tablespoons honey (I used Agave Nectar and it was divine)
1/4 cup Italian bread crumbs
1/4 finely chopped pecans
4 tsp parsley
Salt & pepper
Lemon rounds for garnish




Preheat oven to 400 degrees Fahrenheit.

In a small bowl stir together butter, mustard, and honey, and set aside.

In another bowl mix together bread crumbs, pecans, and parsley.

Place salmon in a non-stick pan and brush tops with mustard mixture and sprinkle with bread crumb mixture. 

Bake salmon for 12 - 15 minutes in preheated oven until it flakes with a fork. Garnish with the wedge of a lemon.

Be prepared to have a taste bud explosion!!

Spinach & Mushroom Stuffed Pork Chops

Deliciously juicy butterfly pork chops filled with fresh spinach and mushrooms. Sprinkled with cheese and seasoned to perfection you and yours will adore this easy meal.

Ingredients
4 butterfly pork chops pounded to 1/4 inches thick
1 pkg of raw mushrooms diced
2 cups chopped spinach
1 cup shredded cheddar cheese
Salt & pepper
2 tsp chili powder
8 toothpicks 

Preheat oven to 350 degrees Fahrenheit.

Place diced mushrooms over medium heat in a fry pan and stir occasionally 5-7 minutes or until cooked thoroughly

Layer spinach, mushrooms, and then cheese on the pork chops before rolling up and securing with 2 toothpicks


Place stuffed pork loins in a non-stick pan and sprinkle with salt & pepper and chili powder. 

Place in oven for 45 minutes or until pork is no longer pink. Cool 5 minutes before serving.


I was so full I couldn't even finish! 

Buttery Mashed Cauliflower

This cauliflower side dish was so tasty I had to have two servings! And without all the guilt because its just a veggie! Super simple to make and a crowd favorite for these southern health nuts.

Ingredients: 
4 cups chopped cauliflower (I used an electric dicer to get mine extra fine)
2 Tbsp of butter
Salt & pepper to taste

Chop the cauliflower and place in a sauce pan with 1/4 inch of water covering the bottom. Place the heat on medium or medium-low and cover, cooking about 10 minutes or until soft.

Remove from heat and drain water. Mix with butter and seasonings. Stir and mash to create optimal consistency.

It would also be fun to experiment with different seasonings for different tastes, but tonight these were perfect!


This is all that remained if my cauliflower-rice after we ate, so yum!

Sweet & Spicy Chicken From Heaven

Do you ever wish you could create the delicious tastes of fast food without all the preservatives and other unknown ingredients? Well a certain Chinese chain has the best sweet & sour chicken EVER, and I finally found a comparable at-home recipe to share with you!

Ingredients:

4 boneless skinless chicken breasts
2 tbsp brown or white cane sugar
2 tbp honey (I used Agave Nectar - it was to die for!)
1/2 c soy sauce
2 tsp ginger
4 tsp garlic
4 tbsp hot sauce (I used Tapatio)
salt & pepper to taste
1-2 tbsp vegetable oil

Mix together sugar, honey, soy sauce, ginger, garlic, and hot sauce in a small bowl and set aside.

Cut chicken into bite sized pieces and lightly salt and pepper.

Heat oil in a large skillet over medium heat. Add the chicken strips and cook stirring occasionally until juices run clear and strips are lightly browned.

Pour the sauce over the chicken and simmer stirring until the sauce thickens, about 8 minutes.
